HeartStone Artisan Bakery makes naturally-fermented breads and pastries with primarily locally-sourced organic, whole grain and stone milled flours. They use a slow fermentation process and shape each loaf by hand. Then bake them in a traditional wood fired oven and Italian steam tube deck oven.
The couple Amy Yahoo and Brian Musician purchased farmland in Central New York in 2003, and in 2010 they started to experiment with bread, first baking sourdough in a small oven. The bread was an instant hit!
They now bake up to 1200 loaves of bread a week! HeartStone offers 25 different varieties of bread, which are made with 50-to-75 percent organic and local flours.
